Lasagna is one of my favorites things to make and it's one of the recipes that I have been cooking since I was a teen. I've been known for my cheesy casserole as well as my apple pie. I am still working on publishing my apple pie recipe, so stay tuned.

I hardly ever have noodles anymore now that my family is low carb. To modify my lasagna recipe I use my Lasagna Breadsticks recipe and double it to make lasagna "noodle" sheets.

The details of this recipe have already been doubled from the original breadsticks recipe.

Preheat oven to 350F.

Line a 17"x11" baking sheet (1/2 cake sheet) with parchment paper.

Mix all ingredients in a food processor.

Pour batter onto prepared pan.

Bake at 350F for 20-25 min.

After baking and allowing to cool for about 5 minutes (so that handling is easier), slice into thirds to create 3 equal pieces approximately 6"x11". Here is what they will look like:
Full Sheet:full lasagna sheet
1/3 Sheet:1/3 lasagna sheet
All 3 Sheets:all 3 lasagna sheets

If you have never made lasagna before, it is super easy and can be done in under 1 hour (start to finish) with these "noodles". The noodle sheets can be made ahead too! Once cooled and sliced, wrap in plastic wrap and refrigerate or freeze until ready to assemble in your lasgana. If you make this ahead of time, then dinner is approximately 30 minutes!

These noodle sheets fit perfectly in a 7"x11" casserole pan.
